Pro-tip: Don’t have a grill? You can sear on the stove top, and then bake at 375 until the inner temp reaches 140. The temp will continue to rise to 145 (get a meat thermometer if you don’t have one – it’s a life saver) after you remove it from the oven, so you pork is not overcooked and dry!!

Note: Pictured are huge pork chops – over ½ pound each! I only ate ½ of mine, and it reheated well the next day for lunch.

Directions for the cheesy polenta:

  1. Cook instant polenta to box directions
  2. Stir in 1 tablespoon of butter
  3. Stir in 1 cup of shredded cheese, I prefer sharp cheddar

Directions for the broccoli:

  1. Cut into florets
  2. Boil in water for 7-10 mins until fork tender
  3. Strain and season with salt, pepper, and powder garlic (your favorite veggie seasoning can be substituted)

Directions:

  1. In a sauce pan, heat up 1 cup of honey until it is bubbly. 
  2. Add 1 cup of peanut butter. Stir until melted. Add a pinch of salt. 
  3. Evenly mix with 4 cups of rice crispies. 
  4. Put wax paper in a pan (I like the thicker bars, so I use a 9 by 9 pan) and add the mixture into the pan. Press down to form the bars. 
  5. Melt 1 cup of chocolate chips and spread over the top of the bars. Pro-tip: if you want these to firm up, throw them in the fridge for about and hour.

Homemade Meatballs

Homemade Meatballs

35 minutes || My rating: 10/10 || Difficulty: Easy

These meatballs are great for a party or for some awesome spaghetti and meatballs. This recipe yields 30 large meatballs. 

  1. Mix all the following together until blended, but do not over mix:
  • 2 pounds ground beef
  • 2 pounds pork sausage
  • 1 cup shredded parmesan
  • 2 eggs
  • ½ cup of fresh chopped parsley
  • tablespoon of salt
  • ½ tablespoon pepper
  • 3 cloves minced garlic
  • ½ cup of seasoned breadcrumbs

2. Make 30 evenly sized meatballs and place on a sheet pan with a greased cookie grate over it – you may need 2 pans. Pro-tip: the cookie grate allows you to get even browning around the entire meatball, but you can just bake these in a 9 by 13 pan if you don’t have one. 

3. Bake for 20-30 mins at 350 degrees until cooked through, about 160 degrees due to the pork sausage. Note: You can freeze these if desired or use immediately. I like to put these in a crock pot with marinara and use for meatball sliders.
