Cinnamon Crunch French Toast

Years ago, Kenny, my sister-in-law, Emma, and I all went to a restaurant for breakfast. We had a corn flake crusted french toast that was to die for, so I had to recreate it in my kitchen!

4-6 thick cut pieces of brioche bread (I used brioche buns before, and they worked great!)
4 eggs
2 tablespoons of cinnamon
1/4 cup of whole milk
1/4 cup of sugar
3 cups of corn flakes
1 teaspoon of salt
2 tablespoons of butter (have extra, as needed)

Directions:

  1. Mix in a medium sized bowl the eggs, cinnamon, sugar, milk, and salt.
  2. On a flat dish such as a large plate or a sheet pan, pour the cornflakes.
  3. Heat a large pan to medium heat and add your butter to the pan.
  4. Take a piece of bread and soak in the egg mixture. Flip to ensure both sides are covered in the mixture.
  5. Take the soaked bread and coat the bread with the cornflakes by flipping it into the corn flakes. You may need to press the flakes to adhere them to the coating.
  6. Cook the coated bread with the cornflakes in the pan with butter until both sides are golden brown. Add more butter as needed.
  7. Serve warm with syrup OR if you’re really feeling up to it, some vanilla ice cream. 😀
