No time to make meals during the week? Prep and make meals ahead of time!

When I know Kenny and I have a busy week or month ahead of us, I try to meal prep over the weekend, so we still have delicious home-cooked meals even when we are busy. I do this in a variety of ways. 

  1. Prep produce by chopping it up ahead of time, so you can make recipes quicker throughout the week.
  2. Make meals and freeze them for food on the go. I do this a lot for breakfast and dinner – make sandwiches, burritos, crock pot meals, etc.and freeze them. Just heat up in the microwave, and go! I will share some of my favorites throughout the next few weeks. 
  3. Portion out your leftovers from dinner for lunches after each meal, so you can quickly grab lunch the morning before going to work. I do this with dinner left overs, yogurt, apple sauce, chopped up fruit, salad, etc.

Fun fact: eating out for lunch on average costs you about $200 per month – taking your lunch not only saves you a ton of money, but it will save you time at work, too!
