No time to make meals during the week? Prep and make meals ahead of time!
When I know Kenny and I have a busy week or month ahead of us, I try to meal prep over the weekend, so we still have delicious home-cooked meals even when we are busy. I do this in a variety of ways.
- Prep produce by chopping it up ahead of time, so you can make recipes quicker throughout the week.
- Make meals and freeze them for food on the go. I do this a lot for breakfast and dinner – make sandwiches, burritos, crock pot meals, etc.and freeze them. Just heat up in the microwave, and go! I will share some of my favorites throughout the next few weeks.
- Portion out your leftovers from dinner for lunches after each meal, so you can quickly grab lunch the morning before going to work. I do this with dinner left overs, yogurt, apple sauce, chopped up fruit, salad, etc.
Fun fact: eating out for lunch on average costs you about $200 per month – taking your lunch not only saves you a ton of money, but it will save you time at work, too!
