Grilled Thai Chicken Pizza

This probably one of my favorite recipes I have ever made. My cousin, Karen, told me about this recipe, so I took inspiration from it. My husband loves this pizza so much! We make it for ourselves and when we have company over when the weather is nice out!
1 pizza dough, any brand
1/2 cup plum sauce
1/2 teaspoon crushed red pepper flakes
1 package (2 cups) shredded provolone
1 tablespoon vegetable oil
2 tablespoons soy sauce
1 rounded tablespoonful crunchy peanut butter
2 teaspoons Franks hot sauce
2 teaspoons grill seasoning (recommended: Montreal Steak Seasoning) eyeball it
4 chicken thighs, 1/2 pound
2 tablespoons honey
2 tablespoons rice wine vinegar or cider vinegar
1/2 cup zucchini cut into matchsticks
1/2 cup carrot cut into matchsticks
Directions:
- Preheat grill to 425 degrees F. You could use the oven if you don’t have a grill.
- Form pizza crust on pizza pan or cookie sheet. Top with plum sauce – spread it around like you would pizza sauce. Sprinkle the pizza with some crushed red pepper flakes then top with cheese. Bake until golden and bubbly. This will take 10-15 minutes.
- While the pizza is cooking, combine vegetable oil, soy sauce and peanut butter with hot sauce and grill seasoning in a plastic zip lock bag. Add chicken and coat evenly with mixture. Let stand 10 minutes then grill chicken thighs 2 to 3 minutes on each side, until the inner temperature reaches 165 degrees. Slice chicken into bitesize cubes.
- While chicken cooks, mix honey and vinegar and add the carrots and zucchini. Turn to coat evenly. This will slightly pickle/marinade the carrots and zucchini.
- Once you take the pizza off the grill, top the hot, cooked pizza with the diced chicken. Drain carrots and zucchini and scatter over the pizza.
- Cut into slices and serve!
