Salmon with Broccoli and Rice

This is one of my husband, Kenny’s, and my favorite meals.
Directions for the Salmon:
- For the marinade, mix ¼ cup Italian dressing, 2 tablespoons of honey, 4 tablespoons of lemon juice, 2 tablespoons of soy sauce, 2 tablespoons of Worcestershire sauce in a gallon Ziploc bag. Add salmon to the bag and marinade for at least 30 minutes in the fridge (best if at least 8 hours).
- When ready preheat the oven to 375 degrees, remove salmon from bag and place on a large piece of tin foil. Wrap the salmon in the foil to fully enclose the salmon. (This will cause it to steam while it bakes, leaving a deliciously moist fish)
- Pro-tip: In the summer, I cook the salmon on the grill by slicing lemons and laying them directly on the grill and playing the raw salmon on top of the lemons to cook. Takes about 10-15 minutes on the grill and you get delicious charred lemons with your salmon.
- Bake for about 20 minutes. Pro-tip: it’s OK for the salmon to be slightly pink, but cook to your liking.
- While the salmon is baking, take the extra marinade and boil on the stove top until it starts to thicken. Place sauce on fish when serving.
Directions for the rice and broccoli:
- Make 1 cup of rice in a rice maker (mine has a nice little grate on top that steams veggies at the same time as making the rice), but you can make it on the stove, too! The broccoli can be boiled in water to get the same effect.
- While the rice and broccoli are cooking, mix your sauce. Combine in a small sauce pan, ½ cup soy sauce, ½ cup brown sugar, 1 tablespoon fresh grated ginger (Pro-tip: you can use dried ginger, but use less as it’s more potent), 2 cloves of minced garlic, and a sprinkle of red chili flake. On medium-low heat, simmer until sauce thickens. This will take 10-15 minutes. Warning: this sauce is addictive! 🙂
- Plate your rice and broccoli and drizzle some of this sauce over the top of them both.
That’s all to it! Super easy, delicious, and pretty good for you, too! We probably eat this at least once every 7-10 days.
Also, it heats up super well as left overs!
