1 Pan Mexican Casserole

- In a large skillet, brown 1 pound of ground turkey. Season with 1 tablespoon of chili powder, 1 tablespoon of cumin, salt, and pepper. Remove from skillet.
- Add 2 tablespoons of olive oil in the pan on medium high heat. Add 2 diced poblanos and 1 can of corn until peppers are cooked through.
- Add cooked turkey, 1 can of rinsed black beans, 1 can of drained tomatoes & green chilis, 2 tablespoons of cumin, salt, and pepper.
- Heat through and top with pepper jack cheese. Cover until cheese is melted.
- Serve in bowls as is or with tortilla chips.
